Heyyyyy! 

I don’t even remember the last time I added a recipe! I honestly don’t remember the last time I cooked. However, if I cook, it’s always something healthy.

The problem is that I always spend much more time searching the internet than cooking. In case you are the same kind of a person, you will definitely love this set of cookbooks, created by a group of healthy-lifestyle enthusiasts. They put together a lot of recipes for healthy and nutritionally balanced breakfasts, lunches, soups, salads, smoothies, as well as desserts. What I like most is that there are micronutrients listed for each recipe, so you know exactly what you ate. 

In case you don’t mind cooking from the Internet, they also have a website or an app called Fitrecepty. Unfortunatelly everything is in Czech. 

I have used these cookbooks several times, but I loved one recipe so much, that I decided to share it with you. These are healthy pancakes with no white sugar and no flour. The sugar is replaced by a banana and the flour by oatmeal. Proteins are provided by cottage cheese (which goes inside) and Greek yogurt (which goes on the top).  

For the batter you will need:

  • 160 g of oats
  • 100 g of cottage cheese
  • 1 teaspoon of phosphate-free baking powder
  • 1 teaspoon of cinnamon
  • ripe banana
  • 1 egg
  • 80 ml of soya milk

You’ll also need:

  • Greek yogurt 
  • strawberries & blueberries (or any other fruit)
  • mint

Steps: 

Simply mix the batter ingredients together. Heat up the pan and bake the pancakes for about 2 minutes from each side. If you have a good pan, you don’t even need to add oil. That’s not my case, so I used a half a teaspoon of coconut oil.

You can decorate the pancakes with Greek yogurt & fruit and a fabulous (not only) weekend breakfast is ready. I was done in about 15 minutes, which is proof that you don’t have to spend hours in the kitchen to prepare a healthy meal. 

And how did it taste? 

I’ve never had better pancakes (okay, the ones from iHop are pretty good too, but hey, those are nastyyyyyy). I made a bit too many of them, so I put them in the refridgerator, which I visited regularly throughout the afternoon. By the evening, they were all gone and I gotta say, that they’re pretty good cold & without the yoghurt too.
